I was late to the Overnight Oats party. I love porridge in the winter months, and during the summer months, I’d switch to smoothies. However much I love smoothies, I never managed to get a recipe that would fill me up until lunch.
Following Deliciously Ella’s Instagram finally swayed me to try them for myself. Inspired by her Peanut Butter Overnight Oats, I started my journey to create a yummy, yet satisfying breakfast.
After lots of trial and error, I’ve discovered a recipe I love. It’s simple to make and keeps me from that mid-morning snack. The great thing about it is that you can pre-mix the dry ingredients ready for use. I store mine in a large Kilner jar and add the wet ingredients when you need them.
Cacao and Almond Overnight Oats
- 1 cup of rolled oats
- 2tbsp chia seeds
- 1tbsp flaxseeds or linseeds
- 1tsp cinnamon
- 1tsp nutmeg
- 1tbsp cacao powder
- 1tbsp almond butter (can use any nut butter, I also like a high-protein peanut butter)
- 100ml of milk. As I’m mainly dairy-free I use Koko coconut milk
I take my Overnight Oats to work and eat them there. I add the overnight oat mixture to my Nude Food Mover and leave it in the fridge overnight. In the morning, I add a mix of pumpkin seeds, blueberries and raspberries to the top compartment and away I go.
